Thomas Merkle is chef at restaurant Merkles. After his culinary training at various high-end restaurants like the Hotel am Münster in Breisach, Hereditary Prince Ettlingen, and Schwarzwaldstube Traube Tonbach, Thomas joined the hotel management school in Heidelberg to become a chef and state-certified restaurateur. In 2003 he joined his family’s establishment Merkles restaurant, where his cuisine has been awarded 1 Michelin star and 17 points from Gault Millau. Here, Thomas excellently showcases his regional cuisine, in which he combines flavours from all over the globe.

Restaurant Merkles is where chef Thomas Merkle’s cosmopolitan nature meets local regional cuisine. Thanks to his great eye for detail and imagination, you can enjoy artistic culinary delights that are beautifully balanced and harmonized. The head chef only works with first-class produce, preferably fresh products from the region. But carefully selected meat, poultry, fish and seafood from international top suppliers also find their way onto the restaurant’s menu. Next to the standard menus, Merkles offers a special, affordable 3-course JRE menu for guests under the age of 30: the Twenü.

Restaurant Merkles is located in Endingen am Kaiserstuhl, a small town in the state of Baden-Württemberg. With over 1500 hours of sunshine per year, this state proudly holds the German record. Popular excursion destinations in the area include the beautiful university town of Tübingen with its medieval townscape and 16th-century castle. The nearby city of Freiburg is known for its famous "Bächle", the narrow waterways in the alleys of the old town. Germany’s largest lake, Lake Constance, is also nearby and extremely popular for hiking, sailing, and cycling.
