Chef Borja Marrero was born and raised in Gran Canaria where he learned about the local cuisine and ingredients that his island home has to offer. He began his career by studying at the prestigious Hofmann School in Barcelona before travelling to the USA and Mexico where he opened his own restaurant while also working for Mexican hotel groups and local celebrities.

MuXgo opened its doors in the new Hotel Sostenible Catalina Plaza in Las Palmas de Gran Canaria and brings chef Borja Marrero’s interpretation of the cuisine from one of the most charming villages of the island to the capital of Gran Canaria. The restaurant is located on the terrace of the hotel and is bright, open and overlooks the Santa Catalina Park. A focal point of this restaurant is the vertical garden from which products are taken directly to the stove making many of the dishes, quite literally, from garden to table.

MuXgo’s Cuisine

Chef Borja Marrero has become well-known throughout Gran Canaria, Spain and around the world for his strict KM0 and “closed circle” cuisine. He owns his own hens, sheep, and goats as well as eco-sustainable orchards. All of the ingredients used to create the dishes on his extensive menu have been locally sourced and challenge the idea of Spanish haute-cuisine with interesting flavour combinations with sustainability firmly at its heart.

Special Activities

Aside from his restaurant, MuXgo, Borha Marrero also has his own farms in Tejeda, located on the summit of a volcano in the middle of a UNESCO World Heritage Site flanked by the Magic Mountains and the Nubio and Bentayga Rocks. These farms have been established by Borja and his family to showcase the traditional Canarian flavours based on respect for the environment, the recovery of species and global sustainability. The farm includes organic orchards, free-range goat, cattle and sheep breeding, an artisan cheese factory, and an ice cream parlour - all of which are used in MuXgo’s cuisine.


The Hotel Sostenible Catalina Plaza is located in the heart of Las Palmas in Gran Canaria and is just a stone’s throw from the Las Canteras Beach and provides exceptional service with an emphasis on sustainability. With 110m2 of natural urban gardens, the hotel is rich in oxygen and able to regulate its own temperature and humidity. All energy in the hotel comes from clean and renewable sources that are produced by the hotel itself.
