With great finesse, chef Antoine Guilmot transforms ingredients into creative culinary delights that are full of flavour and colour. On the menu, you’ll find seasonal specialties such as sea bream with a colourful salad of red cabbage, rhubarb and blueberries; and lamb confit with celery, cauliflower semolina, young shoots and green juice.
