But that’s not where his respect for nature stops: Antoine also aims to reduce food waste and shows a genuine effort to implement a zero waste principle at restaurant NOWA.

Set in the Belgian countryside you’ll find gourmet restaurant NOWA. This fine-dining destination is run by chef Antoine Guilmot and his partner, sommelier Candice. The young couple opened their restaurant in 2019. That didn’t go unnoticed: already within four months, the restaurant was included in the Gault Millau guide. In the homely and warm ambiance of this renovated farmhouse, chef Antoine serves beautiful plates which excellently showcase the best that Belgian terroir has to offer. Prepared with a sustainable “no waste” philosophy, his cuisine is modern, contemporary and seasonal. You can enjoy your meal in the dining room, stylishly furnished with brown velvet chairs and dark wooden floors, or on the sunny terrace, amidst lush green surroundings.
