Together with his father, owner and chef Jörg Sackmann, chef Nico Sackmann prepares innovative creations with a Mediterranean flair. Sackmann’s stylish hotel restaurant opened in 1993. Joining the kitchen team as a chef in 2013, Nico beautifully contributed to the dining spot’s critically-acclaimed cuisine. Between 2014 and 2018, the restaurant was even awarded two Michelin stars. Chef Nico Sackmann began his culinary career by training at the Traube Tonbach with multi-Michelin star chef Harald Wohlfahrt. As a junior chef, Nico then followed an apprenticeship with several top chefs, such as chef Franz Feckl at Landhaus Feckl (Ehningen), chef Joachim Wissler (Vendome Bensberg), and chef Thomas Bühner (La Vie Osnabrück).

Aufgewachsen in einer Hoteliersfamilie lag das Kochen Jörg Sackmann schon immer im Blut. Jörg bildete sich von 1977 bis 1982 bei Chef Harald Wohlfahrt fort. Danach war er im Maître Restaurant (Berlin, 1982), Brenners Parkhotel (Baden-Baden, 1984) und im Aubergine (München, 1986).

Schlossberg’s cuisine

Together with his son Nico and a skilled kitchen team, chef Jörg Sackmann presents innovative and cosmopolitan cuisine. Influenced by Mediterranean and Eurasian cuisines, his (sometimes complex) culinary art is nothing like you’ve ever seen or tasted before. At restaurant Schlossberg, you can opt for one of the two set menus or combine them: the Schlossberg menu (5 to 8 courses) and the vegetarian menu (5 to 7 courses). Among the chefs’ specialties are the ox heart tomato with mozzarella, cucumber relish, and saffron jelly; and the Somafer rack of lamb with confit aubergine, apple crunch, sheep's milk yogurt, and hummus. For those with a sweet tooth there are delicious options as well. For example, the shiso sorbet with verbena, yuzu, lime, mint snow, and matcha tea.

Located in the idyllic Baiersbronn, Hotel Sackmann is the ideal starting point for a day full of exploring. From here, you can easily embark on a day trip to Freudenstadt, Baden-Baden, Strasbourg – or even France or Alsace. For cultural sights in the city of Baiersbronn itself, you can visit the U Gallery or the Glashütte Buhlbach culture park. If you’re more of a sports enthusiast, you can climb the local mountain, (the Stöckerkopf) and hop on the panorama chairlift. Or hike through the Black Forest’s diverse nature with its impressive valleys, rivers and lakes.
