Acquarol’s cuisine is rather dynamic and is based on the quality of raw materials and the search for a new vision of South Tyrolean and mountain tradition. All of the dishes are subject to the availability of fresh local ingredients and what the surrounding nature provides each season. By taking his lead from nature, Chef Allesandro believes that one can cook more consciously and feels that it brings his cuisine closer to the farmers and artisans of the local area. From the summer herbs that are gathered in the mountains to the produce of the earth and freshly caught fish, all dishes are rooted in local tradition but with influences and flavours from as far away as Mexico and beyond…

Acquarol is an oasis of peace and tranquillity, nestled in the Trentino Mountains that is steeped in history and seamlessly merges traditions of the past with the present-day diner’s expectations. The restaurant is located in the Rio Bianco hotel, the oldest hotel in the valley, and provides guests with a relaxed, cosy environment to soak in the local scenery and enjoy some authentic, locally-sourced food from their extensive menu. The interior is dimly lit with a minimalist interior that provides a sense of intimacy and gives the dishes the chance to shine on every table.
