Benjamin Maerz is chef at Hotel Rose & Maerz. In addition to studying food management, he worked at his parents' hotel kitchen. He’s never seen any other restaurant’s kitchen as this is where he has worked throughout his entire career. In 2013, Benjamin received his first Michelin star for his delicious cuisine at restaurant Maerz, which was called restaurant Rose back then. Continually influenced by foreign flavours, this talented chef always aims to improve himself and his cuisine.

Chef Benjamin Maerz showcases a remarkable culinary identity. His cooking is a refined mix of local and global influences. This results in out-of-the-box cuisine and seemingly familiar dishes that taste exciting and surprising. Perfect for those who are in the mood for trying something new, while still experiencing the region’s culinary diversity. As head chef, Benjamin works with first-class (and preferably local) produce. Unlike chefs in other upscale restaurants, he does not shy away from strong flavours and a courageous use of spices. By combining regional traditions with new cooking techniques, Benjamin presents two set menus with modern Swabian specialties, available in 3 or 5 courses. You can also choose the exclusive 5-course gourmet surprise menu or the 5-course truffle menu. One of the chef’s specialties is the beef flank with cauliflower, samosa, and chakalaka. But restaurant Maerz also offers vegetarian options.

Bietigheim-Bissingen area

Hotel restaurant Maerz is located in Bietigheim-Bissingen, the second-largest town in the district of Ludwigsburg, Baden-Württemberg. With over 1500 hours of sunshine per year, the state of Baden-Württemberg proudly holds the German record. Popular excursion destinations in the area include the beautiful university town of Tübingen with its medieval townscape and 16th-century castle. The nearby city of Freiburg is known for its famous "Bächle", the narrow waterways in the alleys of the old town. Germany’s largest lake, Lake Constance, is also nearby and extremely popular for hiking, sailing, and cycling.
