Guy WallinChef Guy Wallyn has been head chef at Bottminger Schloss since the beginning of 2017. It is a return to the workplace for Guy. He worked there as Chef de Partie Poissonier between 2003 and 2011, and made the Schloss famous with his excellent fish dishes.
