An Argentinian-born chef with a passion for contemporary cuisine
Chef Paulo Airaudo was born to an Italian immigrant family in Argentina. Since being an 18-year-old, he has worked in many countries around the world, including Mexico, Peru, and other European countries. The chef was trained in European restaurants like Arzak (3 Michelin stars) in San Sebastian, The Fat Duck (3 Michelin stars) in London, and Magnolia (1 Michelin stars) in Italy. Paulo Airaudo opened his first restaurant, Amelia, in San Sebastián (Donostia) in April 2017, the city where he once embarked on his European adventure.
While my cooking style is contemporary and modern, I always draw inspiration from the best classics.

It is located directly on Playa de la Concha in the Basque coastal city of Donostia (San Sebastián). The bar seats ten guests, who can watch the culinary team at work in the open kitchen. The restaurant also has three tables available. Amelia strives to offer guests a unique culinary experience. For this, the chefs prepare seasonal dishes using innovative culinary techniques. Chef Paulo Airaudo presents a unique tasting menu with an international flair: Airaudo creatively combines Basque cuisine with influences from Argentina, Italy, and Japan.
