At this restaurant, there’s no room for hastiness. Showcasing his slow food philosophy, Die Forelle’s chef Hannes Müller works eco-consciously and with honest foods. His unique cuisine is characterised by delicately composed dishes, exciting seasoning ideas, and aromatic surprises. Chef Hannes is truly passionate about knowing where his ingredients come from, and sources seasonal vegetables and dairy products from local farmers, such as the finest Carinthian sheep’s cheese. As a result, his dishes are always extremely fresh, natural, and healthy.

My cooking style is based on the natural availability of vegetables, wild vegetables and herbs in the area.
