Classical training with a modern hand
Chef Patrick Jenal shaped his foundations at Relais & Châteaux Dollenberg in Bad Peterstal-Griesbach under JRE chef Martin Herrmann, where classic French technique and pastry became central to his work. He joined Restaurant Kunz in Saint-Wendel-Bliesen in 2001, moving from the pastry section to head pastry chef, then sous chef, and in 2012 becoming head chef alongside Alexander Kunz. His cooking is Franco-Mediterranean with modern touches, built on top-quality regional produce, clear flavours, and careful craft. He also invests heavily in training young chefs through industry roles.
