From butcher to Michelin
Chef Christian Fleischmann leads Cheval Blanc at Landhotel Weisses Ross in Illschwang, Bavaria, bringing a craft-led approach shaped by his training as both butcher and chef. Originally from Franconia’s Knoblauchsland, he built his kitchen discipline in Austria and Switzerland, then in top houses including Steiereck in Vienna with Heinz Reitbauer and Schloss Schauenstein with Andreas Caminada. After finishing hotel management school in Pegnitz, he became head chef in 2018 and earned a Michelin star for Cheval Blanc in 2021.
