Chef Renato Martino
Chef Renato Martino is the chef-patron behind Restaurant Vairo del Volturno in Vairano Patenora, and the grandson of its founder. Since joining the family restaurant in 1990, he has reshaped both the dining room and the cooking, taking Campanian tradition as his starting point and pushing it forward through technique and imagination. His menus highlight the area’s signature ingredients, from buffalo and pork to vegetables and peschiole, built into dishes that feel precise, personal and unmistakably local. He also leads the wine choices as sommelier.
