In Cerreto Guidi, PS was created as a space for freedom before it became a restaurant. It is small and intentionally pared back, with an atmosphere shaped by restraint. The kitchen avoids set formulas and fixed expectations, choosing instead to work in a personal direction that stays honest to the moment and to the guest. JRE chef Stefano Pinciaroli cooks with focus and feeling, guided by the local area. He builds dishes from a balance of instinct and discipline, using only what is needed and keeping the ingredient at the centre. The aim is connection at the table, through flavour, contrast and a sense of intimacy that carries through the meal.
